Ingredients:

1 large onion

2 lb. ground chuck 85/15

1 tube turkey sausage or beef chorizo

28 oz. can of crushed tomatoes

28 oz. can of tomato sauce

8 oz. can of tomato paste

6 tbsp. chili powder

3 tbsp. paprika

3 tbsp. cumin

2 tsp. chipotle powder

salt and pepper

all spices are to taste

some people add beans to their chili, but that is not too traditional to Texas (and nor does the Oklahoma recipe from The Diner use beans)
